Hiiii! Hope everyone had an awesome Monday and your week is off to a great start! The weather today could not have been more gorgeous!
I had a great day of client sessions, got some stuff done for my other projects I’m working on and had the chance to sit outside for a couple hours at D&D for a nice business lunch. I fought with myself all day about whether or not I was going to get a workout in and finally decided to listen to my body and make today a much needed rest day.
I worked out 2x yesterday – first at the YMCA, where I ran intervals for 30 minutes on the treadmill, did a quick 3 rounds of chest, tris and shoulders and topped the workout off with 15 more minutes on the stair master….also known as “The Beast” because well, that shit just never gets easy. After the Y, I came home, made a salad and then back out the door for a 7pm yoga class. Needless to say, my body just felt tired this morning so I gave her the day off. I made time this afternoon for some stretching and foam rolling my legs so I can feel nice & loose for my boxing workout tomorrow!
Sunday Night Salad: (pictured to the right) Spinach, tomato, cucumber, red onion, quinoa, goat cheese, tiny bit of olive oil & balsamic vinegar.
I started my day with coffee and my green smoothie, naturally. I was running late, which happens often, so just ran out the door with my smoothie in my glass to finish it in the car. And if you were wondering…yes! I brought my toothbrush and toothpaste with me to brush my teeth when I got to work. Here’s a look at what I ate throughout the rest of the day…
Quinoa and a Gala Apple (my favorite) in between sessions. I make a pot of quinoa to keep and eat throughout the week. You can eat it hot or cold and makes for a perfect snack. Quinoa is a healthy, complex carb, complete protein & loaded with fiber…eat it up!
Lunch at D&D. SO good. Simple and Healthy. Chicken Kabob & Cucumber Salad with cherry tomoatoes, red onion, dill, feta cheese. YUM!
Dinner was more salad with arugala, tomato, cucumber, red onion & goat cheese (forgot to snap a pic) and homemade Beef Goulash with mushrooms, carrots & and I threw in just a tiny bit of quinoa. A perfect, cozy meal for tonight’s crisp fall weather!
