Hi loves. I know you were probably expecting a smoothie recipe but sometimes, nothing say’s Sunday morning like a nice stack of pancakes. Especially on this Sunday morning as it’s pouring rain outside. It’s the perfect day to finally whip up a batch of Paleo Pancakes. I think you guys know that I LOVE me some breakfast and pancakes are a treat that I miss having every once in a while since I don’t eat wheat/gluten. I’ve been scouting Paleo recipes all over the internet for a while but have never actually made any of them. So. Today was the day.. I slept in, relished in this rainy Sunday morning over 2 cups of coffee and then into the kitchen I went to give these pancakes a go.I like the thought of the simpler the better and these couldn’t possibly be any simpler if you tried. Just 3 ingredients and you’ve got yourself a fluffy, sweet & delicious breakfast treat sans gluten & dairy — pretty awesome, if you ask me! I tweaked the recipe a little and added almonds & pumpkin spice.
Paleo Pancake Recipe
– 3 large, ripe bananas
– 1/3 cup coconut flour (or almond would probably be just as tasty)
– 6 eggs
– 10 Almonds (that’s just what I went with today, I’ll probably add more next time for little extra oomph)
– few dashes of pumpkin spice (optional)
– couple pinches of salt
– Coconut Oil (for cooking)
Get all your ingredients ready….
Simply dump everything in the blender to make your batter…
I cooked them for about 5-6 minutes before flipping. Give ’em a look-see for color before flipping. Another 2-3 minutes once flipped. Again, just feel ’em out to make sure their ready and cooked all the way thru. I coated the pan pretty nicely with coconut oil to make sure they didn’t stick.

ok, so I kinda regret putting these blueberries on… 1) they were frozen, not fresh. I pulled them out of the freezer to sit in a ramekin to thaw out while I was making the batter/cooking the panckes 2) for pictures sake, it just doesn’t look very pretty still tasted delicious tho. So really, that’s all that matters.
Fluffy and cooked perfectly thru. Noms.
