BYO: Spinach, Onion & Sun Dried Tomato Omelette
Hello & Happy Sunday! Hope everyone had a wonderful weekend and enjoyed the warmer weather! The weather in CLT has been allllll over the place this week…from our first snow of the season on Tuesday to 70 degrees today. Crazy!
Keeping it fresh, I decided to switch it up this week from the standard Sunday Smoothie post, to a BYO/How To on whipping up a healthy & delicious omelette! An omelette is one of my favorite foods to make and I’ll throw one together whenever – breakfast, lunch or dinner! Quick to make and a super simple way to get in some protein & veggies!
I’ve been in the process of moving this weekend which called for zero social life — LOADS of unpacking, purging & organizing. I made this yummy omelette last night and it was so satisfying.
Onions & Sun Dried Tomatoes:
Onions first. I love to really sweat the onions to bring out the flavor and then toss in the sun dried tomatoes for just a minute.
Spinach:
Super big handful of Organic, Baby Spinach. Toss the spinach in last and let it sautee just a couple minutes before adding in your eggs. I don’t like my spinach sauteed to death, more like wilted. Also, remember the more you cook the spinach (or any vegetable) the more vitamins & nutrients you lose.
Pour in your eggs. I used 3 EB Eggs. I usually do 2 but I was starving!
I like to pop the pan in the oven under the broiler for a few minutes to finish it off! I think this additional step makes the omelette extra yummy – cooks everything thru nice & evenly.
And Voilà! Here you have it…Spinach, Onion & Sun Dried Tomato Omelette!
Throw in any veggies you like. I’ll use asparagus, brussels sprouts, broccoli or whatever I have hanging around. If you have veggies left over from dinner the night before those are always great to throw in. I usually add either goat or feta cheese, but just didn’t have any in the house.
