Happy Monday loves!! Another one of my favorite ways to get in my coffee fix is is to put it in a smoothie! This typically happens if I’m 1) running late to work 2) out of almond milk but its also just so delicious + puts a little pep in your step! I made this Chocolate Chia Coffee Creation a couple times over the last 2 weeks and it is SO GOOD!!
This pretty much tastes like chocolate ice cream but so good for you and full of protein, fiber, healthy fats and antioxidants + loads of potassium & magnesium from the bananas & cacao powder. And I absolutely love cacao nibs – makes me feel like I’m eating a chocolate chip ice cream! yum!!
CHOCOLATE CHIA COFFEE CRUNCH
SMOOTHIE BASE
coffee. 6oz
2 frozen bananas
vanilla protein powder. 1 scoop
cacao powder. 1 heaping tablespoon
cinnamon. about 5 shakes
cacao nibs. 1 tablespoon
BOTTOM LAYER / CHIA PUDDING
chia seeds. 2 tablespoons
unsweetened vanilla almond milk. 1/4 cup
{soak overnight or at least 1 hour before making}
TOPPINGS
my delicious homemade granola
coconut flakes
extra cacao nibs
A few tips for making…
set your coffee aside or, even better, in the fridge long enough to cool & put in the blender
cut a few banana slices to layer at the bottom along with your chia pudding
I like to add a splash of almond milk in the jar on top of my chia pudding
if your coffee hasn’t cooled enough add some ice so you can enjoy this as its meant to be …a fabulous frozen treat!
