Hello & Happy Easter! Hope everyone enjoyed the holiday weekend & had a beautiful Easter Sunday filled with peace, love & joy surrounded by family, friends & anyone else who brings happiness to your life.
It couldn’t have been a more gorgeous day here in CLT — a prefect day to celebrate such a beautiful holiday. I enjoyed the morning with coffee, yummy banana-coconut gluten-free pancakes + a quick workout before it was time to hop in the shower to get ready for 1230 mass.
Afterwards, the day was simply spent enjoying time together, talking & laughing, eating my mom & dad’s delicious Easter cooking, drinking good wine + a so-yum carrot cake for dessert!
The only thing missing was the love of my life, as he’s still away traveling for work. I cannot wait till he gets home in a couple weeks!! eeeek!

Quinoa Tabbouleh rather than the traditional Tabbouleh which is made with Bulgur Wheat and loaded with gluten. Quinoa is a gluten-free grain and Quinoa Tabbouleh is ahhhmazing! The rest is stuffed grape leaves, pita bread & crackers & chicken liver spread. If your thinking ewww, gross…its SO good! lol
This Lamb…YUMMMM
We have lamb for Easter every year and I so look forward to it each year. My dad stuffs it with a gazillion cloves of garlic & leaves it to marinate for 3 days with olive oil, lemon, rosemary + other herbs & spices. It is so tender, juicy & yummy.

so this Carrot Cake was super yum but this year my mom didn’t bake it. She has been so busy with work and didn’t have a chance to bake her amazing carrot cake. This one was great, but super sweet. It came from Publix but mom’s is definitely better. I had 2 pieces. whoops!! I’ll be running my ass off tomorrow. haha #balance 😉
