This chickpea salad is super simple, satisfying & packed with so much healthy goodness!
These creamy little legumes are a vegetarian gem! Chickpeas are a great source of protein if you happen to be a vegetarian or if, like me, opt to not eat meat 1-2 days a week to give your digestive system a little break. Speaking of digestion, chickpeas are loaded with fiber – particularly insoluble fiber – helping to support & aid in healthy digestion & elimination as well as stabilize your blood sugar. In addition to their fabulous protein & fiber content, chickpeas are loaded with a multitude of vitamins, minerals & phytonutrients like Vitamin C, Vitamin E, beta-carotene & manganese to nourish your body & give you tons of energy!
What I Used:
– organic chickpeas. 2 cans (rinsed thoroughly)
– juice of 1 lemon
– EVOO. 2 tablespoons
– garlic. 5 small cloves, crushed
– sea salt. couple pinches
– red pepper flakes. to taste (I like a good bit of heat & P.S. this fires up your metabolism) 😉
Generously mix all your ingredients with your chickpeas and voilà your salad is ready! So simple, right!? This is such a healthy staple to keep in the fridge. For me, this makes for a so-healthy & easy snack to take with me on-the-go or to add on top of greens to make for a yummy mixed salad!
