I bought the most perfect peaches at the market this weekend + a couple cans of organic coconut milk so I decided to put the two together to make this so-scrumptious Sunday brekkie. If you haven’t tried making chia pudding with coconut milk, I highly recommend it – its pretty amazing – super rich & creamy!

PEACH & COCONUT CHIA PUDDING PARFAIT
COCONUT CHIA PUDDING
chia seeds. 3 tablespoons
organic coconut milk. 3/4 cup
organic maple syrup. 1 teaspoon
soak chia seeds in [1/2 cup] coconut milk & set other 1/4 to the side for serving
FROZEN LAYER
1 cup frozen peaches + 1/2 banana
{blend until smooth in food processor}
TOPPINGS
fresh peach pieces
unsweetened shredded coconut
raw cashews
HOW TO
CHIA PUDDING. just before creating your parfait add that last 1/4 of coconut milk to your chia pudding. Chia seeds seem to just love some coconut milk! (lol) Anytime I use coconut milk to make chia pudding the chia’s just totally soak up all the milk & your left with a pretty dried out pudding which isn’t what we want. So add that last 1/4 and give a good stir and then spoon your pudding into your bowl/glass.
FRESH PEACH SLICES. add your peach slices on top of your chia pudding and push a couple into the side of the jar (if you want it to look pretty! 🙂 ) Save a couple/few slices for the top, tho!
FROZEN FUN! Add your frozen peach/banana layer on top of your fresh peaches.
TOP IT OFF. sprinkle of your smaller pieces of peaches, coconut & cashews
