Rather than making what should by now be called our House Salad of tomatoes, cucumber, avocado & greens that I seem to always (always) wind up throwing together, while floating around the store tonight I decided to go with a different combination of leafy green goodness, adding some fruit into the mix! Anytime I order a salad with fruit out at a restaurant, I always love it and then think to myself, “you really need to get more creative with your salads at home” so when I came across the peaches in the store, I found myself a nice ripe one and decided peach + walnut + goat cheese would go perfectly with our Sunday night chicken dinner 🙂
What you’ll need:
– Baby Kale (I used Earthbound Farm Organic Kale)
– 1 ripe Peach
– 1/2 cup raw, unsalted walnut halves
– As much goat cheese as you desire 🙂 ….if your like me, that’s a generous amount
Playing off the natural sweetness of the peach & using what we already had in the house, I quickly came up with this combination of ingredients to create a healthy & tasty dressing:
– Olive Oil, drizzle as much as you like (I don’t care for my salad swimming in oil)
– 1/2 lemon, juiced
– Organic Maple Syrup, 1 teaspoon
– Sea Salt + Pepper, to taste
We got this so-good, super simple & healthy Roasted Chicken Thighs with Lemon & Oregano recipe off Epicurious(dot)com — the recipe calls for chicken thighs with the skin on, but I accidentally picked up skinless and we actually preferred them without.
