Hello loves! Excited to share this Quinoa Pumpkin Spice Smoothie with all of my fellow pumpkin lovers of the world!
This smoothie is super easy to make and will keep you super satisfied all.morning.long. Pumpkin is of course the star ingredient here — I can’t get enough of pumpkin everything during this time of year and thank goodness there are other ways to get this delicious fall food in besides indulging in Pumpkin Pie, right!? Quinoa, believe it or not, blends up super smooth in the blender and is such a great addition of protein, fiber & over-all sustenance. Loads of one of my other favorite, fall holiday flavors, vanilla, really brings this smoothie together, creating that pumpkin pie/pumpkin spice deliciousness! You’ll be using vanilla protein, vanilla almond milk + vanilla extract. Wee!
Quinoa Pumpkin Spice Smoothie
INGREDIENTS
unsweetened vanilla almond milk. 3/4 cup
cooked quinoa. 1/2 cup
trader joe’s organic pumpkin puree. 1/2 cup
VEGA Sport vanilla protein powder. 1 scoop/serving
pure vanilla extract. 1 teaspoon
trader joe’s pumpkin pie spice. 1/2 teaspoon
small handful/about 10-15 cubes of ice

HELPFUL TIPS
– Quinoa thickens this smoothie up quite a bit. With that being said, if the consistency it too thick for your liking, go ahead and use a full cup of almond milk vs. only 3/4.
– More about quinoa, this is one of my healthy must-haves & so amazing to keep in the house. I usually make 1 cup (dry) at a time to keep in the fridge to use for smoothies & toss into salads. I always add 1 heaping tablespoon of coconut oil to my quinoa at the end to make it super deslish. So technically, there is some coconut oil in this smoothie, too!
– I played around with this recipe (a lot) I tossed a banana in one time and while it tasted SO GOOD — the banana stole the show and I didn’t really get that pumpkin pie flavor I was going for. But if you think you want a banana, go for it!
– If you’d like your smoothie a bit sweeter, I recommend using my sweetener of choice – pure, organic maple syrup.
