Hiya loves! Happy Monday! I put together this Raspberry Chia Pudding over the weekend – it was so yummy, couldn’t be any easier to make and its super satisfying. This of course makes for a delicious & nutritious breakfast but you can eat this any time of day, really. I’d even eat this for a healthy dessert.
CHIA PUDDING
Soak 6 tablespoons chia seeds in 1 1/4 cup of liquid
(1/2 cup vanilla almond milk | 3/4 cup water)
(serves 2)
RASPBERRY JAM
simply take 1 heaping cup of organic frozen raspberries and allow them to thaw out
if you don’t have time to let them sit & thaw you can pop ’em in the microwave for about 20 seconds (just enough to soften) and then give them a rough smashing
1 tablespoon organic maple syrup
RASPBERRY JAM. Add this first, to the bottom of your glass.
CHIA PUDDING. Spoon in equal amounts of you chia pudding between the two glasses
FRESH RASPBERRIES. top off with fresh berries
GRAB A SPOON & EAT UP!
Chia Seeds are one of my absolute favorite super foods. Just as they expand in liquid, this is what they do in your tummy – they are full of fiber, protein & omega-3’s – to keep you energized for your day, full & stabilize your blood sugar.
If you know you don’t have time to soak your chia seeds for an hour or so in the morning, definitely make your chia pudding the night before so its ready to eat on the fly!
