Sunday lined itself up to be The Perfect day to stay in and make a big, cozy pot of soup.
On the first day of winter, the weather was true to form, cold, rainy & dreary. I picked up A from the airport, late morning, after traveling all night on a redeye coming in from Alaska after being away for 3 weeks. After some dinner chatter, we decided soup was a grand idea for Sunday din. Immediately, Lentils popped into my mind so I headed over to Food52.com, one of my fave food websites, to search for a recipe.
I came across this hearty & nourishing Red Lentil & Cauliflower Soup that turned out oh-so delicious & nutritious.
Legume Love
Lentils are vegetarian favorite of mine, nutritionally packed with Iron, Fiber, B-Vitamins, Magnesium & best of all, they are a complete protein containing all essential Amino Acids. Just a small amount of lentils work to sustain your energy levels, keeping you satiated while stabilizing your blood sugar.
