You guys went crazy when I shared this incredibly simple summer dinner on my IG Story last night — so many DM’s + heart eye emojis and “omg, yum” reactions — so I decided to create a quick blog post!

I don’t know about you guys, but during the summer months, I can easily live off of all the garden goodies. We have been eating peppers & tomatoes galore from my parents garden, Adam & I have so many herbs growing in our potted garden and I’ve been making weekly visits to the Farmer’s Market for my favorite fruits & veggies like mangos, peaches, cucumbers, watermelon, corn and the best local eggs!



Sharing a little “non-recipe” for everything below…
Cucumber Salad
Growing up, salads were always a big part of our meals and they still are today. My dad has always made the most amazing salads, and cucumber salad is definitely one of my favorites! He’s always used a mandoline to slice the cucumbers super thin and I love using one, too. The bowl in the picture is leftover from a larger batch I made a couple days earlier. {the cucumbers just get yummier & yummier as they sit for a few days}. I simply use olive oil, apple cider vinegar & salt + pepper to taste. For this batch, I used 4 small-medium sized cucumbers {local, from the farmer’s market} and used 1 tablespoon of OO + 4 tablespoons of ACV.
Tomato Salad
I’ve been super into buying burrata for the house recently — it’s a fun little change from mozzarella! And who doesn’t love burrata!? It’s so delicious & creamy. I drizzle olive oil, balsamic glaze + salt & pepper to taste + top with fresh basil from the garden — so fresh & so delicious!
Mezze Platter
I’ve made several mezze platters this summer. They are so fun to make and you can use so many different ingredients. Last nights platter was just a little mini mezze for two, but you can really have a lot of fun making a big one for a large group! Last nights platter was made up of hummus, hearts of palm, marinated artichokes, kalamata olives and some sautéed hot banana peppers {from my parents garden}.
