Power up your morning with this so-yum & easy-to-make Strawberry-Banana Chia Pudding!
If you don’t know by now, Chia Seeds are a fantastic & easy way to sneak in a little extra protein, fiber & Omega-3’s into you diet! This Chia Pudding is such a great way to start your day – especially on those mornings when you need to get out the door in a hurry! The protein x fiber combo will keep you full & energized all morning long!
I think I my Mason Jar obsession has moved onto these tulip jars made by Weck – they are just so damn cute! I swear these adorable little jars make your chia pudding taste that much better! lol
Strawberry-Banana Chia Pudding
INGREDIENTS
Chia Seeds. 3 tablespoons (per jar)
Unsweetened Vanilla Almond Milk. 1/2 cup (per jar)
Banana (1/2 per jar)
Strawberries (about 3-4 per jar)
Cinnamon. 1/4 teaspoon (per jar)
Organic Pure Maple Syrup. 1 teaspoon (per jar)
METHOD
PM: soak chia seeds + cinnamon & maple syrup in 1/2 cup almond milk overnight. I like to baby my mixture a little bit. Adding just chia seeds first, giving them a good stir in the AM, then adding in my cinnamon & Maple Syrup, giving another good stir. Pop ’em in the fridge for about 30 minutes, then give one last good stir before leaving overnight just to make sure everything marry’s together nicely.
AM: pull out your fruit & chia pudding. Add a small splash of AM to your mixture then start slicing your banana & strawberries to add to your jar. You’ll be surprised how many strawberry & banana slices you can pack into this little jar! I like to slide them down the sides of jar, alternating banana & strawberry to make for super yummy, even bites all the way to the bottom!
If you’d like to save one for later, (or share with a friend!) just add a little less fruit so you can secure the lid using the clips that come with the jars.
