Hello loves! Happy Sunday! We are floating away here in CLT. Like, seriously!! I cannot believe the amount of rain we have had this week – Its just been nonstop!
I hope everyone has had a wonderful weekend and a restful Sunday as we gear up for another week! I just wanted to share my so-good brunch that I came home to make after my amazing yoga class this afternoon. I came in the door starving(!!) dropped my bags, stripped off my sweat drenched clothes and whipped this up this deliciousness…
3 Egg Omelette cooked in coconut oil w/ nutritional yeast melted inside
+ side salad of chopped baby spinach + cucumbers & tomatoes w 1 teaspoon grape seed oil + pink saltz & pepper as a simple & lite dressing.
I am working on a post about nutritional yeast but for now I’ll just tell you that its a really fabulous vegetarian source of protein that has this yummy cheesy flavor to it. I like to put it in my omelettes or sprinkle on my salads sometimes!
